Award-winning chefs to open restaurant at Mayo Clinic
JACKSONVILLE, Fla. — Northeast Florida award-winning chefs Matthew and David Medure will open their latest restaurant on the Mayo Clinic campus. Construction on the 7,000 square-foot upscale casual restaurant will begin this summer and is expected to open in late spring of 2021.

"Their restaurants are well known for serving some of the finest made-from-scratch culinary offerings in the region. We look forward to providing our patients, visitors and staff with an excellent table-side dining experience.”
The restaurant will include a full-service bar and a coffee shop grab-and-go area that will replace the cafe currently located in the Cannaday Building. At this time, a decision has not been made on the type of cuisine that will be offered and the restaurant has not been named.
"My brother and I are thrilled and flattered to have been chosen to design, build and bring to life what will certainly be an amazing restaurant," says Matthew Medure. "Mayo Clinic and Jacksonville are connected together so strongly, and being part of that particular ecosystem is exciting. As the demand grows for healthier cuisines, being able to work on recipes and flavors with Mayo Clinic certainly has its advantages."
Medure Brothers Culinary Concepts operates restaurants with a variety of dining concepts from fine dining to craft burgers, including Matthew’s Restaurant in San Marco; Restaurant Medure in Ponte Vedra Beach; Rue Saint-Marc in San Marco; M Shack in Atlantic Beach, St. John’s Town Center and Nocatee; and the newly-opened Midtown Table, also in the St. John’s Town Center area.
Matthew began his career at The Ritz-Carlton, Buckhead following graduation from the Pennsylvania Institute for the Culinary Arts. Recently named by Florida Trend magazine as one of Florida’s most influential entrepreneurs, Matthew was twice nominated for the James Beard Perrier Jouet “Rising Star Chef of the Year” and was selected for a stage at the three-star Michelin Hotel de Paris, Monte Carlo with Chef Alain Ducasse.
The restaurant, which will seat about 200 guests, will be located at the corner of the Mayo and Cannaday buildings on the first floor of a two-story infill building connecting the garage to the hospital now under construction. The new construction in this area of campus also includes a five-floor, 120,000-square-foot addition to Mayo with space for up to eight operating rooms, as well as procedural space for cardiology, gastroenterology and hepatology, and other departments. The building is expected to be completed in late 2021. In addition, adjacent to the Mayo Building will be an 860-space parking garage that will provide much-needed parking capacity and added convenience for patients. The garage is expected to be completed later this year.
